Bouquet: Good intensity and medium breadth, with hint of ripe tropical
fruit, especially pineapple and mango. Emphatic notes of
gorse in full bloom.
Palate : Broad and decisive entry on the palate . The alcoholic war -
mth , while em phatic , is well containe d by freshness an d
good sapidity. Long, with a dry finish.

GROWING area: Sulcis, on the south-western tip of Sardinia.
Climate : Mediterranean climate , with low rainfall distributed sporadically
throughout the year, but concentrate d almost entirely
in autumn and winter. Frequent north -westerly winds,
high temperat ures in spring and summer, mild in autumn,
varia ble from dry and cold to mild in winter.
Soils: The soils are nat urally sandy and clay-chalky, sub-alkaline,
of a rocky, schistous character and medium textured, with
mo derate nutrient levels . Satis factor y levels of minerals
add distinctive character.
Training method: Espalier, pruned with spurred cordon system.
Vineyard yield: 90 q/ha
Appearance: Straw yellow with pale green highlights.
Servin g suggestions: fish soups, GRILLED FISH, fresh pecorino cheeses.
Servin g temperat ure: Summer 8 - 10 °C. Winter 12°C
HARVEST: BETWEEN LATE AUGUST AND EARLY SEPTEMBER.
VINIFICATION: BEFORE BEING GENTLY PRESSED, PART OF THE GRAPES MACERATES FOR 12 HOURS AT 6 - 8°C; THE MUST FROM THE WHOLE GRAPES THEN FERMENTS AT 14 - 16°C. AFTER CLARIFICATION AND STABILISATION, THE WINE MATURES A MINIMUM OF 2 MONTHS IN THE BOTTLE.
