Grapevine: Vermentino 100%.

Vineyard: Hilly countryside of middle-Southern Sardinia, form of espalier, density of 5.000 stumps/ha, average yield of 2 kg/stump, hill ground, clayey, calcareous soil, mediterranean climate, with mild winters, scarce precipitations, and hot, windy summers.

Vinification: Delicate destemming, cooling of the must, and brief maceration of vinasses, soft pressing, 12 °C static decantation, fermentation at 16-18 °C, the wine is kept at a low temperature with of its own dregs for at least 2 months, light clarification, and later bottling.

Colour: Tenuous straw-yellow, with greenish reflexes.

Bouquet: Primary and secondary intense and persistent aroma.

Taste: Fresh and slightly acid, sapid, soft and persistent, with a characteristic final bitterish in the mouth.

Serving suggestions: Seafood, shell fish, and all fish-based dishes.

Service temperature: 8-10 °C.
