In Sardinia an Easter tradition is preparing "is pardulas", more commonly called "pardule" or casadinas. This product is rightly one of the most good, as well as one of the oldest, as related to the age-old pastoral culture of Sardinia.
Ingredients: cow's milk and sheep's milk ricotta, sugar, eggs, orange and lemon grated peels, saffron, flour type 00, strutto.
