Puddu's sardinia sausage is prodicted by blending an equilibrium of lean and fat parts of the pork. Due to the peculiairty of the product, the meat is thickly cut and is then flavored with sea salt, pepper, fresh crushed garlic and natural aromas. It is leftto rest in a refrigerating room for about 12 hours before being stuffed into natural intestines previously washed with wine andvinegar.
The binding is nowadays still done entirely by hand and the seasoning takes from 20 to 40 days.
